I am always in a search for good low-carb recipe, and this time it comes from the oven. It’s simple, it’s quick, and it’s delicious.
Now, many would say it’s just another egg recipe, what’s with delight?! Yes, it is one more egg recipe, but when we add heavy cream and vegetables, we’re getting pretty good meal. And served this way, we’re getting also nice looking meal.
If want to impress your kids, just prepare it for them, let’s say for… breakfast.
OVEN BAKED EGGS WITH HEAVY CREAM AND ASPARAGUS
Ingredients that you need:
- 2 eggs
- 5 stalks of asparagus
- 4 tablespoons heavy cream
- salt and pepper
- a few drops of olive oil
Preparation:
As we said earlier, preparation is very simple. Takes about 15-20 minutes for preparation and cooking in total. Also, you can use microwave, it will take less time. But you’ll need small ceramic bowls for baking. Recipe makes 2 servings.
Clean the asparagus (from each break off the end – woody part). Cut them diagonally and cook it for three minutes in salted boiling water. Then strain.
Grease a small ceramic bowls with olive oil, and place the blanched asparagus. Then mix it with heavy cream (2 tablespoons per bowl). Add salt and pepper.
Break the egg first into a small cup, and then carefully pour it in the dish. Bake in oven at 200 °C (390°F) until the eggs thicken.
Before serving sprinkle baked eggs with salt and pepper.
Serving suggestion: You can serve it with buttered slice of low-carb bread.
