This meal is low in carbs, and it\u2019s suitable if you\u2019re following a low carb diet.<\/p>\n<p>It also has endless possibilities for how you can swap ingredients for your favorites or add meat to make it a more substantial meal.<\/p>\n<h3>GOLDEN CHEDDAR BROCCOLI PIE<\/h3>\n<p><strong>Ingredients<\/strong> that you need:<\/p>\n<ul>\n<li>\u00bd cup blanched almond flour<\/li>\n<li>2 tablespoons solid coconut oil (not melted) or diced chilled butter<\/li>\n<li>1 cup half-and-half or cream<\/li>\n<li>3 large eggs<\/li>\n<li>2 cups chopped steamed broccoli florets<\/li>\n<li>\u00bd cup diced cooked onions<\/li>\n<li>1 cup shredded sharp Cheddar cheese<\/li>\n<li>2 tablespoons finely grated Parmesan<\/li>\n<li>1 \u00bd teaspoons baking powder<\/li>\n<li>olive oil spray<\/li>\n<\/ul>\n<p><strong>Spices:<\/strong><\/p>\n<ul>\n<li>\u00bc teaspoon ground black pepper<\/li>\n<li>\u00bd teaspoon dry mustard<\/li>\n<li>dash of cayenne pepper, optional<\/li>\n<li>\u00bc teaspoon sea salt<\/li>\n<\/ul>\n<p><strong>Preparation:<\/strong><\/p>\n<p>At first, preheat oven to 350 degrees F (180 degrees C). Lightly spray a 10-inch glass or ceramic baking pan with olive oil spray.<\/p>\n<p>In a medium-large bowl, add almond flour, coconut oil, salt, and baking powder.\u00a0 Using a pastry or dough cutter, cut the coconut oil into the flour mixture until it is evenly distributed and resembles crumbs.\u00a0 Then add half-and-half (or a cream), eggs, pepper, and dry mustard and whisk until blended.<\/p>\n<p>Spread broccoli in the bottom of pie dish. Scatter with cooked onions and top with shredded Cheddar cheese.\u00a0 Pour liquid mixture evenly over the top of the broccoli\/onions and sprinkle with Parmesan.\u00a0 Bake for about 40-45 minutes until golden brown and done.
