Baking zucchini chips can add complexity to classic nachos and make them a tasty snack that won\u2019t kill your diet.<\/p>\n<p><strong>Prep Time:<\/strong> 5 minutes<br \/>\n<strong>Cook Time:<\/strong> 45 minutes<br \/>\n<strong>Total Time:<\/strong> About 50 minutes<\/p>\n<p><strong>Servings:<\/strong> 3<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n3 large green zucchinis<br \/>\n2 large tomatoes<br \/>\n\u00bc cup of Daiya shredded cheese<br \/>\n\u00bd cup of black beans<br \/>\n\u00bc cup chopped cilantro<br \/>\nSpray <a href=\"http:\/\/www.loveforhealthyfood.com\/?p=989\"><span style=\"color: #99cc00\">olive oil<\/span><\/a><br \/>\nGarlic powder<br \/>\nSalt and pepper<br \/>\n<strong>Optional:<\/strong> non-fat Greek yogurt (as a substitute for sour cream)<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>1.Preheat oven to 400\u00b0F.<br \/>\n2.Cut zucchini into \u201cchips\u201d (about \u00bc inch slices\u2013 thinner for crispier chips, thicker for more hearty nachos).<br \/>\n3.Line a baking sheet with foil and spray it with olive oil.<br \/>\n4.Place zucchini chips in one flat layer and sprinkle with salt, pepper and a little garlic powder. Spray another even layer of olive oil on top.<br \/>\n5.Place in oven and allow them to bake for 40 minutes.<br \/>\n6.Remove from oven, sprinkle with cheese and put back in the oven for an additional 5 minutes.<br \/>\n7.Take out of the oven and let cool.
