Despite the fact that Rick Bayless incorporates many organic and local produce items into his cuisine, some might argue that Frontera is not a particularly healthy choice as many of the dishes on the menu are still high in calories. This baked version of the Mushroom Trio Quesadilla is just as flavorful, and arguably, healthier \u2014 plus it only costs $2.82 per serving to make at home (compared to $7.50 to buy at Norris).<\/p>\n<p><strong>MEDIUM<\/strong><br \/>\n<strong>Prep Time:<\/strong> 15 minutes<br \/>\n<strong>Cook Time:<\/strong> 20 minutes<br \/>\n<strong>Total Time:<\/strong> 35 minutes<\/p>\n<p><strong>Servings:<\/strong> 2<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n<em>2 whole wheat tortillas<\/em><br \/>\n<em>2 \u00bd cups mix of baby portobello, shiitake and cremini mushrooms, sliced (shiitake and cremini optional)<\/em><br \/>\n<em>1\/2 poblano pepper, finely diced<\/em><br \/>\n<em>1 <a href=\"http:\/\/www.loveforhealthyfood.com\/?p=541\"><span style=\"color: #99cc00\">garlic<\/span><\/a> clove, minced<\/em><br \/>\n<em>1 tablespoon chili powder<\/em><br \/>\n<em>1\/4 cup shredded Monterey Jack cheese<\/em><br \/>\n<em>1 teaspoon sea salt<\/em><br \/>\n<em>2 tablespoons olive oil<\/em><br \/>\n<em>1\/4 <a href=\"http:\/\/www.loveforhealthyfood.com\/?p=1088\"><span style=\"color: #99cc00\">avocado<\/span><\/a>, sliced<\/em><\/p>\n<p><strong>Directions:<\/strong><br \/>\n1. Preheat oven to 375\u00b0F and line a baking sheet with aluminum foil.<br \/>\n2. Heat olive oil in a frying pan over medium-high heat.<br \/>\n3. Add mushrooms and saut\u00e9 for approximately 4 minutes, or until mushrooms begin to soften and shrink.<br \/>\n4. As mushrooms are cooking, dice poblano pepper and mince garlic. Add to pan and saut\u00e9 for an additional 90 seconds then remove from heat.<br \/>\n5. Sprinkle chili powder and sea salt onto mushroom mixture and toss lightly until evenly coated.<br \/>\n6. Lay the wheat tortillas on the lined baking sheet.<br \/>\n7. Spoon the mushroom mixture onto half of each tortilla.
