I mean let\u2019s be honest, who knew that slicing zucchini into noodle form and saut\u00e9ing it briefly would taste good. While zoodles are definitely not the same as pasta, they are a perfectly suitable and guilt-free way to indulge in a one-pot meal of creamy deliciousness.<\/p>\n<p>If you are like me and feel somewhat wrong eating an entire meal of solely vegetables and need a pork product to make you feel human, cook your favorite sausage on the side, slice, and add to the top of your zoodles. It\u2019ll still count as healthy, I promise.<\/p>\n<p><strong>Level: Easy<\/strong><\/p>\n<p>Prep Time: 10 minutes<br \/>\nCook Time: 10 minutes<br \/>\nTotal Time: 20 minutes<\/p>\n<p>Servings: 1 (or 2 if you eat like a rabbit)<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n<em>2 tablespoons olive oil<\/em><br \/>\n<em>2 cloves garlic, finely diced<\/em><br \/>\n<em>2 medium zucchini or squash<\/em><br \/>\n<em>Juice from 1 lemon<\/em><br \/>\n<em>1 \u00bd tablespoons corn starch (or tapioca starch if you want to make it Paleo)<\/em><br \/>\n<em>\u00bc cup water<\/em><br \/>\n<em>Any veggies or toppings you\u2019d like\u2014you can see I added some sweet potato and asparagus<\/em><br \/>\n<em>Salt and pepper, to taste<\/em><br \/>\n<em>\u00bd tablespoon dill<\/em><\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>1. Using a spiralizer, slice zucchini and squash into noodle form. If you don\u2019t have a spiralizer, you can use a mandolin, super sharp knife, or vegetable peeler to slice the squash thinly, and then cut into noodle-sized width from there.<\/p>\n<p>2. In a medium-sized frying pan, heat the olive oil and <a href=\"http:\/\/www.loveforhealthyfood.com\/?p=541\"><span style=\"color: #99cc00\">garlic<\/span><\/a> over medium heat.<\/p>\n<p>3. Add the zucchini noodles and lemon juice and saut\u00e9 for another 5-10 minutes or until soft.<\/p>\n<p>5. In a small bowl or cup, combine corn starch and water and stir until fully incorporated. Add to pan and stir everything constantly until the mixture starts to thicken.<\/p>\n<p>6.
